  • A refreshing and clean Petit Chablis with lemony notes on the crisp, mineral, and dry palate, through to a mouthwatering finish. This is made in a fuller style with longer ageing on the lees to give weight. There's nothing 'petit' about this wine!

The Chardonnay grapes come from the family estate vineyards grown in the heart of the Chablis appellation, in a parcel where the vines are aged between 15 and 25 years. The climate is continental, with cold winters allowing the vine to rest and the sap to descend and warm summers, allowing the grapes to ripen. The yields are carefully controlled to ensure the highest quality of fruit, by concentrating the flavours in the grapes. The vineyards are managed using sustainable agriculture methods, reducing the use of chemicals in order to respect the land and its environment. Chemical weed killers are not used and the vineyard is carefully cultivated in order to respect the biodiversity of the soil. The soils are predominantly Kimmeridgian, which comprise limestone and clay, and a significant proportion of fossilised oyster shells. It is from this particular subsoil that the wines of Chablis draw their unique character, purity and minerality

In 1975, Jean-Pierre Ellevin established the current domain, which is situated in the village of Clichée, in the heart of the Chablis appellation and decided to specialise in the production of Chablis. Jean-Pierre is the fifth generation of the family to own and
run the domain with expertise having been passed from father to son over the years. In the 1980s Jean-Pierre married his wife, Brigitte Cerveau, also from a winemaking family with a history dating back to the French revolution. Today, Jean-Pierre and Brigitte
cultivate 16 hectares, which is exclusively Chardonnay. Together with their son Alexandre Ellevin, who heads up the winemaking, they are passionate about respecting tradition whilst producing excellent, aromatic wines, which are a true reflection of their origin.
