About Tahbilk Winery – A Pioneer of Sustainability and Heritage
Founded in 1860, Tahbilk is a family-owned winery in the Nagambie Lakes region of Central Victoria, Australia. Known for its world-renowned aged Marsanne and historic vineyards, Tahbilk’s name originates from the Daungwurrung word “tabilk-tabilk,” meaning “place of many waterholes.”
The estate spans 1,214 hectares and includes some of the oldest Cabernet Sauvignon vines in Victoria, with plantings dating back to 1949. Grown sustainably along the Goulburn River on sandy loam soils, the fruit reflects its unique terroir.
Tahbilk achieved carbon-neutral status in 2013 and was awarded ‘Winery of the Year’ by James Halliday in 2016, cementing its reputation as a leader in environmentally responsible winemaking.
Winemaking Excellence
Hand-harvested and machine-picked fruit were fermented in open vats with careful temperature control and daily pump-overs. After fermentation, the wine was matured for 18 months in large format French oak barrels, some up to 100 years old, allowing the fruit to shine while gaining subtle oak integration.

| Winery | Tahbilk’s vineyards are grouped along the banks of the Goulburn River, and an anabranch of it flows through the estate. The vines are grown at approximately 134 meters of gently undulating and flat terrain. The soils are sandy loams with ferric oxide content, which varies from wonderful sand near the anabranch to denser loams on the plains. Estate Cabernet Sauvignon vineyards date from the 1940s to the 1990s. The oldest of the blocks is the 1949 “Old” Cabernet, planted on excellent red sandy soils. The vines are trained on a single wire trellis with a mixture of head and cordon training; all are cane-pruned. Tahbilk's vines are sustainably cultivated; composting and mulching improve soil health by promoting earthworm activity. Mulching helps to control weeds and conserves water, reducing vine stress. The old vines are hand-picked, while younger vines are machine-harvested. |
