“If there is one thing that has been made abundantly clear to me it’s that, it doesn’t matter if the glass is half full or half empty, there’s clearly room for more wine!”

The most difficult part of this recipe is ensuring the wine makes it to the pan!

2 oranges

1 lemon

1 lime

200g caster sugar

1 cinnamon stick

8 whole cloves

2 star anise

2 bottles of Italian red wine





“What’s the best wine for mulling?”

For this recipe we recommend a rounded, well balanced Tempranillo or a warm Chianti to get the best results!


1. Peel large segments from the Oranges, Lemon and Lime using a potato peeler.

2. Put the sugar into a saucepan followed by the pieces of peel, then squeeze in the orange juice before placing over a medium heat.

3. Add the cinnamon stick and cloves, then stir in a splash of red wine (enough to cover the sugar).

4. Simmer the mixture until the sugar has completely dissolved, then bring to the boil. Keep boiling until the mixture resembles a thick syrup.

5. Once the syrup is ready, lower the heat and put in the star anise before adding the remainder of the wine.

6. Gently heat the wine (do not allow it to boil), when it is warm and fragrant, ladle into glasses and serve.

IMPORTANT: Boiling wine causes the alcohol (and all the fun) to burn off. Creating a syrup base allows you to infuse the sugar and spices into the wine, without having it lose its potency

Why not garnish with a slice of orange and a cinnamon stick, after all, Christmas is the most wonderful time of the year.
