SOIL PROFILES AND HARVEST
Sandy loam alluvial soil, with an average depth of 60 cm. By
underneath a weathered stone layer covered in calcium carbonates
in a clay matrix.
Grapes selected manually, destemmed and ground. Fermentation
in conical concrete basins, without epoxy, with yeasts
natives. Aging in 500-liter barrels and in concrete tanks.
