The grapes were carefully destemmed in order not to crush the berries. Each variety was vinified with minimal intervention in cement eggs. The egg shape helps to keep the liquid constantly in motion, so the temperature is more consistent, and the leaves remain in suspension. The resulting wine achieves a greater character and volume on the palate. Once the alcoholic fermentation was complete, the wines blended, and malolactic conversion occurred. A brief maturation happened within the same cement egg before the wine was bottled early to retain the freshness and purity of the fruit.
A stunning high altitude blend, where pure juicy berried fruit notes are complemented by hints of jasmine and anise in this elegant and fresh wine.

Winery | This wine takes its name from the average height of the selected parcels for this blend. The grapes come from Finca El Alto in Ugarteche, Lujan de Cuyo, where the Petit Verdot vines are planted at 1,030 meters above sea level in the stoniest plots with calcium carbonate. The Bonarda vines are planted in the lowest part of the same vineyard, at approximately 908 meters elevation, where the soil is mostly clay with gravel and pebbles. The Malbec also comes from the same vineyard. The double-cordon trained vines are drip irrigated and yield between seven to 10 tonnes per hectare. The climate is characterized by its warm days and cool nights, with a thermal amplitude of 14°C and an average annual rainfall of 250 millimetres. At Dona Paula, the vineyards have always been managed with sustainable farming practices. |
