- Aromas of ripe, dark, bramble fruit and culinary herbs lead to a smooth, velvety palate with vivid, dark fruit enveloping alluring tannins. An energetic yet classy Gevrey: intense, with a soft graphite note giving a long, savoury finish. 2019, like 2018, was a hot and dry season and an early vintage, beginning for reds on the 7th of September on the Cote de Beaune. However, it produced a very different style to 2018; the 2019 is more charming. Perfumed with red fruit, it is instantly more engaging and flowing than the darker, firmer and more compact 2018s. In 2019, the terroir showed above the vintage character.
Vinified with minimal intervention to allow the limestone site's freshness, minerality, and tension to be expressed. In 2019, just three kilos of fruit were sufficient for just one barrel. With such a tiny quantity, any movement can have a significant effect. It took five days to get started in its small vat wrapped in roof insulation. 25% of whole bunch fruit was added for a floral lift and extra complexity. Fermentation lasted 15 days. Matured in traditional 228-litre French oak barrels from a variety of coopers and forests, with no new oak, allowing the nuances of the terroir to be expressed, lasting for two winters.

Winery | The fruit comes from the highly reputed Domaine Rossignol-Trapet from the village status lieu-dit of Combes du Dessus. An exceptionally well-sited plot, on a gentle east-facing slope just below the Premier Cru on the hill. David and Nicolas Rossignol were among the first in Burgundy to work with biodynamic viticulture in the 1990s, and by 2004, the whole domain was converted. Following biodynamic viticulture improved the quality of the soil, resulting in heightened levels of energy and vibrancy in the wine. The soils are limestone, which, combined with Pinot Noir, usually results in a certain austerity, but in warmer vintages, it emerges as a vibrant and crunchy style. The duo has trialled netting sections of the vineyard against hail, which, when measured against a control, has resulted in the INAO acceptance of this practice to the potential benefit of all. |
