strawberry and plum fruit with a touch of cinammon and
minerality on the finish.
Producer Note
Sebastien Bidault makes the wines from this new Domaine comprising 11 hectares
owned by his wife Anne’s parents in both Côtes de Nuits and Beaune. Great attention
is given to the quality of the grapes in the vineyards which are farmed organically.
2019 has been cited as an outstanding vintage and one of the best in recent years.
The dry, warm conditions produced low yields of impeccably balanced, concentrated
wines with refined freshness and remarkable purity. A mild winter was followed by a
chilly spring, with frosts affecting some areas. Cooler temperatures in June resulted in
uneven flowering and some millerandage in some vineyards. However, temperatures
soared in July and August with vines under hydric stress, resulting in superb
concentration and complexity of flavours.
Clos de la Bidaude is a ‘Monopole’ single vineyard owned by Domaine Robert Gibourg
in Morey-Saint-Denis, which borders the Grand Cru appellation of Clos des Lambrays.
Domaine Robert Gibourg cultivates his vines according to “la lutte raisonnée”, using
sustainable agricultural methods and reducing the amount of chemicals in order to
respect the land and its environment. Pesticides and herbicides are not used in the
cultivation of the vines; instead, a regular tilling is performed to remove weeds and
maintain the health of the soil. The soils are made up of chalk and clay and impart
finesse and elegance to the wines. The grapes are harvested by hand at optimum
The grapes were sorted, destemmed and underwent cold pre-fermentation maceration
for four to five days. Fermentation took place with wild yeasts and lasted approximately
18 days. The wine was pressed and then aged in barrel for 12 months, which added
texture and complexity, before being gently fined and lightly filtered prior to bottling.
Tasting Note
A textured and elegant Burgundy, with concentrated aromas of red and black fruits
underpinned by hints of cloves. On the palate, the beautifully balanced tannins are
enveloped by a lovely freshness of Pinot Noir fruit.
