Domaine George Lignier et Fils Gevrey-Chambertin Les Combottes 2014

Beautiful colour, with an intense nose, of blackcurrant and small red and black fruits. When ageing, we get some animal and musky aromas. The wine is powerful and structured, with a good balance between firm tannins and soft jamy fruits, as well as a good acidity level. Ages well from 5 to 15 years.

The parcels are located at the south entrance of Gevrey Chambertin, on a south exposed hillslopes. The soil is mainly composed of gravels, on a light hearth layer, that get warm easily. It gives fruity wines. Domaine Lignier owns 1.5 hectares.

Vinification

Harvest is 100% destemmed and the vinification is driven in 3 phases:
Maceration which lasts 2 to 4 days.Then start the alcoholic fermentation with the transformation of the must into wine for 3 to 4 days. After that we need 4 to 5 days to get a nice extraction of tannins, anthocyan …
After the pressing process, the new wine is directly stocked on French wood barrels of 228 litres of which 30% is new oak. The maturing in barrels lasts 18 months during which we will do 2 rackings to get ride of the lees. The wine is bottled by Georges Lignier in the estate.

Can support elaborated and full bodied food, like lamb or beef, even chicken or game in wine sauce. Marries well with strong matured cheeses except blue cheese. To be served at 13°C when young, and between 16 and 17° for ripe vintages.
