Producer Note
Domaine de Gournier is located in the Cevennes region and benefits from excellent
exposure to the Mediterranean sun combined with the freshness of the Cevennes
Mountains. In 1959, Maurice’s father, a ‘pepinierist’ by trade (a nurseryman specialising
in vine rootstock and clones) bought Domaine de Gournier. He pioneered planting
noble varieties in a region where at the time hybrids were the norm, with the aim of
producing quality wines. At the beginning of the 1980s, Maurice took over, producing
wines under the Domaine name. Today, Maurice Barouin and David Helou take care of
180 hectares of vines located in 14 different villages, 50 hectares of which are already
organic. We are delighted to list their elegant wines under the 'La Savetière' label.
Vintage
2020 was characterised as an early vintage. The winter was mild and rainy, which
replenished the soil’s water reserves ahead of the warm summer. Spring warmed up
and the vine’s cycle progressed well. Summer was warm and dry, but not excessively
so, with autumn bringing cooler evenings allowing the grapes to reach excellent
maturity. Harvest proceeded under good conditions and the grapes produced
concentrated fruit flavours balanced by natural freshness.
Vineyard
Domaine de Gounier’s vineyards are located in the Cevennes, a mountain range on
the edge of the Massif Central. Covering 180 hectares of vines across 14 different
villages, the vines are planted in the best plots according to the variety, where they
flourish in the Mediterranean climate. The vineyards benefit from the warmth of the
Mediterranean sunshine, tempered by mountain freshness. The vines are grown on the
slopes of the Gardon Valley, where the soils are made up of chalky clay topsoils with
the presence of gravel, which helps to aid drainage. The vines are manually pruned
according to the Cordon de Royat method, to maintain the freshness and fruit- forward
flavours. The vineyard is cultivated sustainably, the soil is ploughed to avoid the use of
herbicides and the grapes are harvested during the cool of the night to preserve
freshness and varietal fruit character. The estate is HVE certified, recognising
environmental biodiversity and natural resource management. 50 hectares of vines are
certified organic.
Winemaking
The grapes were carefully selected, destemmed and cool macerated to extract
flavour, colour and tannins. Fermentation took place in stainless steel tanks at
temperatures of 26 to 28°C, lasting eight to 12 days. Following fermentation, the wine
was aged on its fine lees for six months in concrete tanks, before being bottled.
