  • A fleshy and mineral example of Cabernet Franc with distinct herbaceous notes combined with blueberry and enhanced with vanilla spice and hints of graphite. A fine example of Cabernet Franc is this wine, which shows extraordinary aromatic purity, expressing white pepper, green pepper, and spicy notes highlighted by mineral overtones. The juicy fruit on the palate is textured, leading to a long, satisfying finish.

The grapes were placed in cement egg-shaped fermenters to allow fermentation to take place spontaneously with native yeasts. The fermenter's egg shape facilitates vinification without requiring numerous pump-overs to extract components such as anthocyanin and polyphenols. Due to its ovoid shape, everything inside is in constant motion, allowing gentler and more homogeneous extractions. Once fermentation was complete, maceration with the skins took place over 40 days, and the wine was then removed from the tank before being returned to the same egg-shaped vessel for nine
months further ageing.

A fine example of Cabernet Franc, this wine shows extraordinary aromatic purity. It expresses white pepper, green pepper, and spicy notes highlighted by mineral overtones. The juicy fruit on the palate is textured, leading to a long, satisfying finish.

Winery

The vines are grown in a high-altitude, drip-irrigated single vineyard in Tupungato, Gualtallary, in the Uco Valley. At the Tupungato volcano's foot, Gualtallary is situated at 1,350 metres above sea level in the Province of Mendoza's highest vine-growing zone. This zone is characterised by its combination of altitude, alluvial soils, sunny days, low rainfall and wide temperature ranges. The diurnal temperatures here oscillate between 35°C and 17°C, creating long, slow ripening periods, concentrating the flavours in the fruit while retaining balancing acidity. The cool climate and white, chalky soil impart delicious acidity and great structure to the wine.
