Analytical data
A proportion of whole bunches were used and pressed directly, whilst de-stemmed grapes underwent cold maceration for 6-8 hours. Fermentation took place at low temperatures in stainless steel tanks of various sizes for W0 days, followed by three months on the Ene lees, with regular pump-overs.
It is an intensely aromatic wine, full of tropical and citrus characters such as grapefruit, alongside mineral and herbal notes. Lively and zesty to taste with a textured and long-lasting finish

Winery | The grapes come from three blocks of the San Antonio vineyards, each planted to a different clone. The soils are made up of decomposed granite and quartz, and the vineyards are farmed biodynamically and organically. The grapes were hand harvested, block by block, to ensure optimal ripeness. We are a boutique biodynamic winery in the Rosario Valley, between the coastal valleys of Casablanca and San Antonio. Our vineyards were planted in 1999 on the hillsides of this privileged area, making us among the pioneers of cool-climate Syrah production in Chile. |
