Producer Note
Les Collines du Bourdic was established in 1928 by a handful of vignerons from Bourdic
and the surrounding villages, who produced authentic light, easy-drinking and fruit
forward wines which reflect the heritage of the region. The skills and knowledge were
passed down through the generations and in 1985, the cooperative rebranded as ‘Les
Collines du Bourdic’. Today, it covers 1,700 hectares of vines, of which 150 are organic
and certified HVE Level 3. Passionate to showcase the best of their region, they
produce a range of vibrant wines under the Héritage label, which are a reflection of
the simple gestures of yesteryear. While the vinification methods are more modern, the
spirit and the profile of the wines remain the same, with light and luminous colours,
aromatic vibrancy and all the quintessential flavours of the South of France.
Vintage
2021 was an extremely challenging vintage across France. After a warm start to the
spring, which brought the vines along, a sudden severe frost hit vineyards during the
second week in April, damaging the buds and significantly reducing yields throughout
the Languedoc Roussillon region. While the production was significantly reduced across
the region, the remaining fruit produced juice of excellent quality.
Vineyard
The vineyards are spread across the undulating hills ‘les Collines’ of the Bourdic region.
The influence of the Cévennes to the north results in temperature differences between
day and night from 14 to 18°, which preserves the natural acidity in the berries and
translates the fruit into fresh wines. The vines are planted in deep, low fertility soils which
encourage the vines to send their roots deeper into the soil in search of nutrients and
water, resulting in greater complexity. The Viognier vines are planted with a south to
south-easterly orientation, capturing the maximum sunlight hours to ripen the fruit. The
grapes are picked when the seed is ‘al dente’ devoid of any bitterness, which requires
knowledge and experience to harvest at the optimum moment. The harvest takes
place at night to retain the freshness in the fruit.
Winemaking
The grapes were carefully selected to ensure the best quality fruit was vinified and then
gently pressed to obtain the must. Fermentation took place at cool temperatures in
stainless steel tanks with selected yeasts, to retain the purity of fruit. The wine was
bottled young to preserve the freshness and aromatic characteristics of the Viognier
variety.
