Mas de Lavail Maury Sec La Toureze 2020

Part of the estate extends under the Cathar castle of Queribus, on black schist soil; the name of the Maury appellation comes from the local dialect for the black lands. The shale is beneficial as it stores the heat of the sun and radiates it at night. The Grenache and Carignan particularly benefit from this, and reveal exceptional sugar concentration. The grapes for this wine come from old vines which are carefully selected for their low yields of 25 hectolitres per hectare. The region benefits from the warm Mediterranean climate, which is tempered by cooling sea breezes. The vines are cultivated organically and sustainably; use of sexual confusion of predators is employed as an alternative to insecticides, biodiversity is preserved and the use of cover grass is an important source of organic matter which promotes the activity and biodiversity of the soil. Part of the estate is already certified organic and the remainder is in conversion. The vines are hand-harvested at optimum maturity.
