Marc Hébrart and his wife started making Champagne in 1963, adding plots little by little due to the high price of land in Champagne. In 1997, Marc retired and his son Jean-Paul became director. Their estate now covers 15.5 hectares, over 68 plots spread across the Marne's two river banks. In the Côtes des Blancs, Hébrart’s Grand Cru terroirs of Avize, Oiry and Chouilly produce fine, ripe and mineral Chardonnays. The Premier Cru terroirs of Aÿ, Mareuil-sur-Aÿ, Bisseuil and Avenay-Val-d'Or in the Vallée de la Marne and Montagne de Reims produce juicy and structured Pinot Noirs. This diversity and estate supply enables Jean-Paul to create very precise cuvées and to control the quality from the vineyard to the winemaking. In the vineyard, natural methods are used to cultivate the vines. In 2014, Hébrart was quoted as being among the 100 Best Wine Producers in the World by Wine&Spirits Magazine.
Created in 1971, the Club Trésors was the first Champagne winemaker's association to advocate an approach to viticulture, based on standards of utmost quality and a pure expression of terroir. Special Club Champagne is only made in outstanding years and from the growers' own vineyards. The bottle is dedicated to the 28 winegrower’s most distinguished cuvées. The Pinot Noir grapes are selected from two plots of 60 year old Vieilles Vignes: Faubourg d'Enfer and Croix Blanche both located in Mareuil-sur-Aÿ; and the two Premier Cru plots of Cheuzelle and Pierre Robert, located in Aÿ. The Chardonnays are selected from Oiry and Chouilly Grand Cru for 25% of the blend. 25% also comes from two plots found in Mareil sur Ay: the Beauregard plot (named after its amazing view of the Côtes de Blancs hills) and the Ramonette plot. Both of these vineyards produce concentrated, powerful and opulent wines. Marc Hébrart practices sustainable viticulture, keeping chemical treatments to a strict minimum.
Each parcel was gently pressed and vinified separately in oak barrels to preserve their individual characteristics. This wine was made from the "Coeur de Cuvée" or the heart of the free-run juice. Fermentation took place in small tanks and partially in wood. The wine underwent a malolactic fermentation. Riddling took place by hand and dégorgement was carried out approximately six months prior to release. It was aged for four years on its lees, creating a wonderful complexity.
