Producer notes:

Lalou Bize-Leroy is known for her precise viticulture on the 21-hectare Domaine Leroy. An absolute perfectionist, Lalou uses holistic practices across the vineyards incorporating her knowledge of astrological and cosmic influences, as well as organic practices, to care for her vines.

Lalou understands that the vines and terroir are as alive as she is and tends to them as such. No synthetic products or chemicals (fertilisers, herbicides or pesticides) have been used on the vineyard since 1988, the soils are hand-tilled, and buttage and debuttage is undertaken with the lightest vehicles possible to avoid compacting the soil. Pruning is never systematic – undertaken vine by vine as needed – and Lalou applies herbal mixes to the vine’s open wounds to help the healing process.

Bize-Leroy’s practices are certainly seen as unique, if not a little controversial, but her courage has paid off. By producing wines from low yields and bottling them naturally, without fining or filtration, she has succeeded in producing a portfolio of wines that are the absolute expression of their terroir.

Vintage:

Frost reduced yields in some vineyards, but the year produced charming, elegant wines that are accessible and well-structured.

Vineyard:

Bize-Leroy tends the vines with the utmost individuality. For example, vines are only replaced as needed – never the entire vineyard – by young plants grown from sister buds from the same vineyard and selected by eye for their robustness.

The vines are Guyot-trained and pruned from mid-January through to April (dependent on the Moon) to reduce yield and increase quality. Herbal teas and mixes are applied to each open wound according to the needs of each vine.

Winemaking:

Grapes are hand-harvested and transported in small baskets to two large sorting tables where they are selected without the use of conveyor belts.

Fermentation takes place in large wooden barrels without any de-stemming or crushing to avoid oxidation and preserve native yeasts on the grape’s skin. The fermentation is slow and the maceration is long.

Once pressed, the wine is aged in a first cellar before gravity filtering, then moved to a deeper, cooler cellar where it remains until bottling.

Tasting notes:

A beautifully balanced white Burgandy. Pale yellow in colour and a tart apple nose flecked with minerals and flint. Tight yet vibrant on the palate with a creamy texture that comes out over time, it has incredible depth and volume: citrus with buttery notes still flecked with minerals. The finish is clean, fresh and a good length.

Serving suggestions:

Beautiful alongside a traditional roast chicken with vegetables.
