Producer Note
As well as making sublime Champagnes, long-standing partner and friend François Moutard, along with his family, also make white Burgundy from grapes grown near the town of Tonnerre. These wines are noted for their minerality and purity of fruit.
Vineyard
The vines are ploughed and fertilised during the winter months using preparations from animal and vegetable origins. Marc de raisins is also used. Green harvesting takes place at the end of May, to enhance the quality of the fruit. The grapes are harvested by hand.
Winemaking
The grapes undergo a gentle pneumatic pressing, the must is transferred to temperature controlled vats with cold settling at 7C. The rose wine gets its colour from the saignée or bleeding method. The traditional method is used of secondary fermentation in the bottle to obtain the "prise de mousse" at 15°C. It is then aged for a minimum of 12 months, prior to bottling in April- May. Dosage 10g/l.

Serving Suggestion
Serve at 4-8°C, delicious as an aperitif, or with grilled red meat. Also complements red fruit desserts and rich chocolate based puddings.
