Producer Note
The Moutard family has been making wine since 1642. François Moutard's 21 hectares of vines are located in Buxeuil on the Côte de Bar, the highest region in Champagne. Over the generations the Moutard family has explored the potential of the different terroirs, maintaining traditions while experimenting with different grapes varieties. François is one of the very few growers who can produce a Champagne 6 Cépages - which is made up of the six permitted grape varieties: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane. Winemaking
Delicate blend of Chardonnay, Pinot Noir, and red wine from Coteaux Champenois (still wine from Champagne). Coteaux Champenois and Champagne Pinot Noir are fermented separately and white grapes in another batch. Then they are blended to create the perfect balance between freshness, richness and fruitiness. Gentle pneumatic pressing. Temperature controlled tanks. Traditional methode champenoise. 36 months in bottle. Ageing on lees for at least 3 years. Tasting Note
Subtle with complexity, the first floral senses blend with the essence of red fresh fruit such as raspberries and wild strawberries evolving towards peppery and spicy aromas. A beautiful Champagne with a distinctive style. Serving Suggestion
This wine with the stronger backbone of the Coteaux Champenois Pinot Noir, and richer fruity style, is a very food friendly and versatile wine. It can accompany delicate or rustic charcuterie such as Parma ham or paté, light salads, light pasta and rice dishes, especially with seafood, raw and lightly cooked shellfish and grilled fish and goats' cheeses.
