Perrier-Jouët is a small boutique Champagne producer founded in 1811 following the marriage of Pierre-Nicolas-Marie Perrier and Adele Jouët. Since then it has enjoyed a passionate following from the royal courts of Queen Victoria and Napoleon III as well as Coco Chanel, Grace Kelly, Oscar Wilde and Lily Langtry. In 1902 Emile Gallé, a proponent of the Art Nouveau movement, was commissioned to create a special bottle for the best cuvée. Today the anemone motif he created is a definitive symbol of all that Perrier-Jouët represents: refined, elegant Champagne. Perrier-Jouët has been at the forefront of wine innovation for over 150 years. It brought the first dry Champagne to the British market and announced the first vintage Champagne in 1846. Hervé Deschamps, who joined Perrier-Jouët in 1983 and is currently Chef de Cave at Perrier-Jouët, previously worked in the cellars for ten years as the assistant to Andre Baveret. Andre had been the custodian of Perrier-Jouëts distinctively styled wines for 30 years, prior to his retirement. This stability has allowed the house to maintain its integrity of style.
Its refinement will be perfectly expressed with shellfish, such as lobster and prawns. As a dessert, the sweetness of panna cotta lifted by the acidity of a blood orange and pink grapefruit jelly.
