Magnificent greenish gold in colour with a chrystalline brightness
and a strong, intense effervescence with fine and regular bubbles.
Highly aromatic and packed with notes of white flowers, honey,
lemon, fresh plum and pineapple. The palate confirms the
complexity and richness of the bouquet with an initial lively
freshness leading into a rounded palate that displays notes of
honey, vanilla and short bread right through the long, long finish.
The vineyards chosen for Fleur de Champagne have an average
échelle des crus rating of more than 99 percent, making this one
of the most highly-rated prestige cuvées. Chardonnay for this
cuvée comes from 100-percent-rated villages of Cramant and
Avize within the district of Côte de Blancs. On the slopes of this
famous Chardonnay district are Perrier Jouët's 100-percent-rated
estate Cramant vineyard that provide the structure, elegance,
lightness and floral finesse for which Perrier Jouët Champagnes
are known. The Pinot Noir comes from 100 percent rated villages
of Aÿ, Dizy, Mailly and Verzenay, the with première cru Pinot
Meunier grapes from Dizy.
Beyond the toasts and ship launchings, Champagne has a place at
every dinner table. Belle Epoque Champagne pairs well with gouda
and almonds; St. Jacques tartare; smoked salmon, lemon-herb
blinis, crème frâiche and caviar and saffron risotta with prawns
and sweet pepper romesco; scallops ceviche with lemon.
