Producer Note
Château de Chamilly is situated in the appellation of Bourgogne Côte Chalonnaise, between the Côte de Beaune to the north and the hills of the Mâconnais to the south. The Château was purchased by the Desfontaine family in the 19th century and the vineyard was then expanded to include several blocks of first growth land in Mercurey. The estate has been handed down through the generations and since 1999, the 16 hectare estate has been run by Véronique Desfontaine and her sons, Xavier and Arnaud. They studied viticulture and gained experience in Australia and New Zealand respectively. There is a strong focus on quality, while maintaining utmost respect for the vineyard. It is managed following the principles of 'la Lutte Raisonée', or sustainable agriculture and farmed using organic preparations. A philosophy of minimal intervention takes place in the winery, where they produce delicious benchmark Côte Chalonnaise wines.


Vintage
The 2015 warm summer saw early flowering, with rapid development. Ripening was slowed due to hot July temperatures, but rain at the end of the month eased drought pressures. A cooler August allowed ripening to advance. Fine weather during the harvest resulted in superb quality fruit with excellent phenolic ripeness.


Vineyard
The grapes come from the Premier Cru ‘lieu-dit’ or named vineyard of Les Puillets, in the appellation of Mercurey. The 1.25 hectare plot is situated in the middle of an east
to south eastern facing bowl shaped slope, which protects the vines from the northern and westerly winds. In the summer months the vineyard reaches very hot temperatures. The 40 year old vines are Guyot trained, a system which suits the Pinot Noir in this terroir. It is a variety that needs a lot of management, as it is vigorous, so
debudding, green harvesting and leaf thinning takes place in the vineyard. The vines are grown in a fine chalky soil, which is rich in iron with a layer of soil and a rock subsoil. The vineyard is cultivated using organic preparations.


Winemaking
The grapes were hand-harvested, carefully sorted and underwent a cold pre fermentation maceration for six days. Fermentation took place in concrete vats followed by a maceration of six to seven days. The wine was left to rest for six to eight months as a whole in tank, prior to being aged for 20 months in French oak barrels, of which 18% were new. The wine was estate bottled, without fining or filtration.
