The Grenache Gris and Grenache Noir vines are grown in schist soils, in vineyards
which are influenced by the nearby Mediterranean Sea, the mountains, the warm
southern French sunshine and cooling coastal breezes.
The grapes were harvested by hand at optimum maturity. They were then
destemmed and crushed, followed by a maceration period of approximately three
weeks. Fortification stopped the fermentation, in order to retain some of the wine's
natural sweetness. One part of the wine was aged in large oak barrels for at least 10
months, while the remainder was aged in stainless steel to preserve the freshness
and fruity characters of the wine.
