The Rivesaltes appellation takes its name from the town of Rivesaltes, which in Catalan means "High Banks". The plots are situated in Salses next to Rivesaltes, in the Roussillon region, in a soil mainly composed of granitic and gneissic sands, brown or black schists and occasionally of red limestone soils.
Harvest took place by hand when the grapes had reached optium maturity. Destemming and crushing was followed by a short maceration period of around three to five days. Fortification stopped the fermentation and retained some of the wines natural sweetness. The wine was left to age for two years in barrel, followed by another 15 years in large oak cask.
