Producer Note
Oveja Negra's definition of Black Sheep is someone special and out of the ordinary
who attracts attention and stands out from the crowd. Winemaker Carlos Gatica
seeks to combine sustainable viticultural practices with innovative winemaking, to
produce fruit-driven wines of real character. "Sustainability, expression of terroir, and
quality are key. The aim is to deliver wines with superior quality, at fair prices, made in
harmony with nature". These are individual wines for individual people.
Vineyard
The Petit Verdot comes from 13 year old vines and the Cabernet Franc from 16 year
old vines in the best blocks of the San Rafael vineyards, in the Maule Valley. Situated
at 20km from the Andes Mountains and 70km from the Pacific Ocean, the soils here
are thin layers of sedimentary deposits of volcanic ash. The Carignan is sourced from
59 year old vines in the Cauquenes area which is closer to the sea at 52km, but
sheltered by the coastal range of mountains making it very warm and dry. Here the
soils have deep sedimentary deposits of volcanic ash and are low fertility, perfect for
stressing the vine into producing concentrated, flavoursome berries.
Winemaking
The grapes were handpicked in the early morning, selected by hand and then
destemmed, but not crushed. A second manual sorting took place to ensure only
the best bunches were vinified. A five day cold maceration took place at 10°C for
the Petit Verdot and Carignan; with a three days for the Cabernet Franc.
Fermentation lasted seven to 10 days, with two to three pump-overs per day. The
total maceration time varied depending on the variety. Each lot of wine was racked
to barrel, where spontaneous malolactic fermentation took place. Each component
was aged for 20 months in 300 litre French oak barrels (35% new). The final blend
took place one month prior to bottling.
