Tasting Note:
The nose is a clean, focused and pure expression of the grape,
with the violets and earthy, slightly rustic aromas. No sulfur is ever
used at the winery, yet the wines are so clean and pure that it's
hard to believe. The palate is medium-bodied with some earthy,
slightly grainy tannins and with great acidity.
Winemaking:
The wine is made with no intervention of any type, true to the
history of Sauzal. The grapes are hand harvested and destemmed
on a bamboo destemmer. Spontaneous fermentation begins after
3 or 4 days in old wooden lagares of different sizes – with no
temperature control, nor the addition of native yeasts.
Fermentation occurs completely naturally lasting from 18-21 days.
The wine is then transferred into their old barrels before they press
the pomace with big, heavy stones. No sulphur is used at any
stage of the winemaking. The wines are kept in old barrels for one
year during which time they undergo gentle malolactic
fermentation. Filtering is done simply by racking. Bottling is done
by hand, bottle by bottle and all the family are invited to help!ine is

Vineyard :
From family vineyards that were planted 1940s, and two other
vineyarsd also in the village of Sauzal (Flores and Truquilemu) that
are all ungrafted, dry farmed and head-pruned.
