The south facing vineyards are situated on the slopes of Cadillac. Chateau Fayau holds the Haute Valeur Environmentale (HVE) certification, which officially recognises the environmental performance of winegrowers, including biodiversity conservation, plant protection strategies, managed fertiliser use and water resource management. Trained to the Simple Guyot method, the vines have an average age of 25 years and are grown in clay and silica soils. The grapes are hand harvested.
Château Fayau is a beautiful chartreuse style building surrounded by vines in the heart of the historic village of Cadillac. The 35-hectare estate has been in the Medeville family since 1826 who carry on the proud tradition of making sweet botrytised wines and a traditional red Bordeaux blend. The vineyards are sustainably cultivated and are hold the HVE certification. Planted with Semillon, Sauvignon Blanc, Muscadelle, Cabernet Sauvignon, Merlot and Cabernet Franc vines, their wines are fresh and fruity .
