The grapes were lightly pressed, and the whole bunch was not destitute. The must was then clarified by cool, static sedimentation. Fermentation took place with selected yeasts in temperature-controlled stainless steel tanks. The secondary fermentation occurred in the bottle per the Traditional Method, followed by 24 months of bottle ageing.

Winery | The country estate Can Llopart de Subirats is located in a singular enclave in the municipality of Subirats, a mountainous area of the region. The estate comprises 500 hectares of forests and vineyards, of which 102 hectares are dedicated to the vine. Situated at an average altitude of 360 metres, the diurnal temperature differences extend the ripening period and create aromatic profiles. The vineyards cover an undulating topography, with slopes and terraces of limited soil depth, producing vines with great root extension, limited vigour and low yields. 60% of the vineyards are planted as bush vines, with some using Cordon Royat and Guyot training to maximize natural ventilation. The vineyard is cultivated sustainably, with the utmost respect for the environment. Cover crops nourish the soils; pests are controlled with sexual confusion, and green pruning takes place to encourage natural ventilation and reduce treatments of sulphur and copper salts. The vines are hand-harvested. |
