- A refreshing and creamy Crémant combining notes of white fruits with the elegance of fine minerality, through to delicious brioche notes on the finish.
The grapes were gently pressed in a pneumatic press; only the finest, first-pressed juice was used in this cuvée. Fermentation occurred in temperature-controlled, stainless
steel vats with selected yeasts, followed by malolactic conversion. The secondary fermentation was carried out in the bottle using the Traditional Method, which was generated by adding yeasts and sugar to produce a gentle sparkle. The wine spent 12 months on the lees to build texture and gentle complexity. The dosage for this wine was 9g/l.

Winery | The grapes come from a combination of estate vines and grapes sourced from carefully selected vineyards in Burgundy. The estate covers 116 hectares across the Côte Chalonnaise, where the vineyards are made up of clay-limestone soils, which offer the perfect balance of water retention properties from the clay. At the same time, the limestone element imparts natural elegance to the wines. The climate is continental, with relatively cold winters and warm, dry summers creating good ripening conditions. The hilly topography gently influences the microclimates in the Côte Chalonnaise, leading to slightly lower rainfall levels than other areas of Burgundy. The estate vines are Guyot-trained and carefully hand-harvested at optimum maturity. The team at André Delorme is fully committed to sustainable viticulture, and the vineyards are certified HVE Level 3, which officially recognises environmental performance, including biodiversity conservation, plant protection strategies, managed fertiliser use and water resource management. |
