Founded in 1979 by wine merchant Mario Caramel, Canevel's goal remains to highlight the true potential of the Glera grape. The name, meaning ‘small cellar’ in the local dialect, is a testament to the boutique origins of this now prestigious producer.
Following a gentle pressing, the juice was left to settle for eight hours at 15ºC. It then underwent temperature-controlled fermentation in stainless steel tanks, followed by a second fermentation at low temperature in sealed tanks. The wine was then aged in the tank for one month before bottling.
