  • Grenache does the heavy lifting, a variety we haven’t dived into much as it’s far from the underdog varieties we typically use. Touriga Nacional from the mighty Langhorne Creek is our next heavy hitter in the blend. It adds a rich, ironstone drive full of ripe black fruit and black olive tapenade.
Being winemakers, we're two people incredibly passionate about the soil and produce we have in Australia. It's our intent to showcase products to the rest of the world that embrace Australian native ingredients and pay homage to the indigenous custodianship who maintained the land for thousands of years. It's this passion that has driven us to start two wine labels, one that protects our farmers and another that protects our future. We've since taken these concepts and with our distillery, applewood - catapulted it into the horticultural realm - studying indigenous produce, it's beneficial effects on our land and the stories it can tell through incredible colours, flavours, and textures. We seek Australian identity in the products we craft and the services we offer. We seek ways to communicate this with an entirely new demographic. Our hope is that these Australian stories can one-day be heard on a global scale.

Unico Zelo is a small winery, run by the youthful Brendan and Laura Carter. Still only in their mid-twenties, this dynamic couple have been making wine under the Unico Zelo label for the last seven years, taking their inspiration from their intense passion for their native land. The wines are crafted from varieties that require minimal intervention, both in the vineyard and the winery. The in-depth study of vineyard sites in South Australia has led them to focus on Italian varieties, such as Fiano and Nero d’Avola which are perfectly suited to being dry-farmed in the arid Riverland as well as Dolcetto, Nebbiolo and Barbera which flourish in the inland, continental climate of the Clare Valley. These delicious and unique wines combine sustainability and drinkability to great effect.
