Gaining a cult status among top wine journalists for their elegant, fruit-driven and complex wines, Ulithorne Wines was established in 1969 and is located in the heart of the McLaren Vale. Their philosophy is to craft premium wines which reflect the singularity of their source. Their obsession with ‘the source’ acknowledges the concept of terroir and applies it with meticulous individual attention. Taking influence from the Rhône Valley, the winemaking focuses the very minutiae of terroir and the recognition of how the unique characteristics of this ancient land influence each vine and its fruit. Ulithorne Wines’ philosophy of singularity leads to tiny batches of highly acclaimed wines which capture the very essence of their terroir.
The 2016 vintage in McLaren Vale was extraordinary. One of the rare vintages that offered up beautiful weather conditions, which allowed a gradual and positive flavour development in the grapes. Aromas and fruit flavours were at their peak at harvest and all the focus was on flavour ripeness; with good acidity and low baumé also being positive features. 2016 is one of the great vintages of the decade.
The 65 year old vines are dry grown in two separate vineyards in the Blewitt Springs and McLaren Flat sub-regions, where the soils are deep sand. Trained to a single wire, the vines are carefully hand pruned to manage the canopy each vintage, to ensure the optimum amount of sunlight and shade is provided. This also reduces the need for spraying, which is kept to a minumum. The grapes are machine harvested for speed to ensure the maximum freshness is maintained in the berries.
The Viognier and Marsanne were both picked in the coolness of the night. The fruit was cooled to 10°C and then crushed together. Using the gentlest possible setting, the fruit was pressed slowly over many hours. A slow fermentation lasted for 34 days, under temperature controlled conditions. Only the free run wine was selected to create the freshness and complexity required for the Dona Blanc, with the addition of fresh, crunchy premium Pinot Gris. The final blend was held in stainless steel vats until the lees had settled and the wine stabilised ready for bottling.
