About B5B: Between Five Bells are the last three words in the first stanza of Kenneth Slessor’s famous poem, Five Bells. The poem is understood to tell the tale of the death of Joe Lynch, a friend of the poets, and is set on/in/around (it gets confusing) Sydney Harbour. A beautiful lyrical poem, well worth a read and central to the way we think about the B5B wines.


The Wine:

For no other reason than to be delicious. This is the fourth release of our WHITE. When it should be drunk is up to you, probably not long after it comes into your possession.
The base of the 2015 B5B White is Pinot Gris; we split this into two parts and ferment separately. The first part is destemmed, gently perssed and fermented in foudre. The second is fermented on skins for 10-12 days. While the wine is naturally fermenting in the foudre we introduce Fiano, Chardonnay & Riesling juice at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy.
This isn’t a new concept but rather a reimagining of chaptalisation.
