Gaining a cult status among top wine journalists for their elegant, fruit-driven and complex wines, Ulithorne Wines was established in 1969 and is located in the heart of the McLaren Vale. Their philosophy is to craft premium wines which reflect the singularity of their source. Their obsession with ‘the source’ acknowledges the concept of terroir and applies it with meticulous individual attention. Taking influence from the Rhône Valley, the winemaking focuses the very minutiae of terroir and the recognition of how the unique characteristics of this ancient land influence each vine and its fruit. Ulithorne Wines’ philosophy of singularity leads to tiny batches of highly acclaimed wines which capture the very essence of their terroir.
2014 was a small vintage for McLaren Vale, with lower than average yields. Summer and Autumn offered long, cool days, which allowed for a long maturation period, the grapes to ripen evenly and for the natural acidity to build in line with the sugar levels. The Shiraz is high quality with small, concentrated and flavoursome berries. The quality is superb and more elegant and restrained than the previous vintage.
The vines are trained to a single wire and are dry grown on the slopes of Amery Hill, in the Blewitt Springs subregion of the McLaren Vale. The vines grown in the notorious deep sandy soils of the area and are carefully hand pruned to ensure the optimal canopy management suited to each vintage. There is a minimal use of sprays and the grapes are handpicked once they have reached the desired level of maturity and flavour profile.
The grapes were cooled overnight as whole bunches and then crushed the following morning. Fermentation took place in small open fermenters, with gentle hand plunging twice daily. Following the fermentation the wine was basket pressed to barrels, where it was aged for 17 months in two to five year-old barrels.
