Gaining a cult status among top wine journalists for their elegant, fruit-driven and complex wines, Ulithorne Wines was established in 1969 and is located in the heart of the McLaren Vale. Their philosophy is to craft premium wines which reflect the singularity of their source. Their obsession with ‘the source’ acknowledges the concept of terroir and applies it with meticulous individual attention. Taking influence from the Rhône Valley, the winemaking focuses the very minutiae of terroir and the recognition of how the unique characteristics of this ancient land influence each vine and its fruit. Ulithorne Wines’ philosophy of singularity leads to tiny batches of highly acclaimed wines which capture the very essence of their terroir.
The 2015 vintage was early. The fruit had a longer than usual flowering period, while the cooler weather in January allowed the fruit to hang through a cool phase and encourage flavour and ripeness. As soon as the sun warmed up again in early February, the vines had built final ripeness and the berries were ready for picking. A very dry vintage, which required some small amounts of additional watering in some of the Blewitt Springs vineyards.
The grapes are carefully selected from four sites throughout the cooler, elevated foothills of the Blewitt Springs vineyards. Generally dry grown and trained on a single wire, the vines are grown in the deep sandy soils of the subregion. The bunches of berries are harvested by a combination of hand and machine once they had reached the desired levels of maturity.
The whole bunches were cooled overnight and then gently crushed the following morning. Fermentation took place in small open top fermenters, with gentle hand plunging twice daily. The wine was then basket pressed and aged separately for 12 months in a combination of old French oak barrels and stainless steel tanks.
