Gaining a cult status among top wine journalists for their elegant, fruit-driven and complex wines, Ulithorne Wines was established in 1969 and is located in the heart of the McLaren Vale. Their philosophy is to craft premium wines which reflect the singularity of their source. Their obsession with ‘the source’ acknowledges the concept of terroir and applies it with meticulous individual attention. Taking influence from the Rhône Valley, the winemaking focuses the very minutiae of terroir and the recognition of how the unique characteristics of this ancient land influence each vine and its fruit. Ulithorne Wines’ philosophy of singularity leads to tiny batches of highly acclaimed wines which capture the very essence of their terroir.
2014 was a small vintage for McLaren Vale, with lower than average yields. Summer and Autumn offered long, cool days, which allowed for a long maturation period, the grapes to ripen evenly and for the natural acidity to build in line with the sugar levels. The quality of the Grenache is superb, with more restraint and elegance than the brilliant flavours of 2013, but with the gentleness that holds Grenache through the cellaring time. The Shiraz is also high quality with small, concentrated berries.
The vines are trained on a single wire and are dry grown on the slopes of Amery Hill in the Blewitt Springs sub region of McLaren Vale. The soils are made up of deep sands The vines are carefully pruned by hand to manage the canopy each vintage, to ensure the optimum amount of sunlight and shade is provided. This also reduces the need for spraying, which is kept to a minimum. The harvest takes place by hand, once the grapes have reached the desired levels of maturity.
The whole bunches were carefully selected and cooled overnight, followed by crushing the next morning. The fermentation took place in small open fermenters with gentle, hand plunging twice daily. The wine was then basket pressed to barrels, where each wine was matured separately for 12 months in a combination of old French oak barrels and stainless steel tanks.

This wine has the richness to match robust lamb dishes such as braised lamb shanks, Moroccan tagines or spicy stews and mild lamb curries.
