Gaining a cult status among top wine journalists for their elegant, fruit-driven and complex wines, Ulithorne Wines was established in 1969 and is located in the heart of the McLaren Vale.
Their philosophy is to craft premium wines which reflect the singularity of their source. Their obsession with ‘the source’ acknowledges the concept of terroir and applies it with meticulous
individual attention. Taking influence from the Rhône Valley, the winemaking focuses the very minutiae of terroir and the recognition of how the unique characteristics of this ancient land
influence each vine and its fruit. Ulithorne Wines’ philosophy of singularity leads to tiny batches of highly acclaimed wines which capture the very essence of their terroir.
The 2015 vintage was early. The fruit had a longer than usual flowering period, while the cooler weather in January allowed the fruit to hang through a cool phase to encourage flavour and
ripeness. As soon as the sun warmed up again in early February, the vines had built in final ripeness and the berries were ready for picking. A very dry vintage, which required some small
amounts of additional watering in some of the Blewitt Springs sandy soil vineyards.
The Shiraz is trained to a single wire, whilst the Grenache are old bush vines. Both varieties are dry-grown in the deep sandy soils, across selected sites throughout the cooler elevated
foothills of Blewitt Springs.
Whole bunches of Grenache were cooled overnight and then gently crushed the following morning. The fermentation took place in small open-top fermenters with hand plunging taking
place twice daily. Following the fermentation, the wine was basket pressed to barrel, where a natural malolactic fermentation occured. The Shiraz underwent a similar vinification process
and was kept separately until final blending. Both varieties were aged in old French oak barrels for 14 months to mature, but without the oak influence on flavour.
