Producer Note
Named 'Winery of the Year' in James Halliday's 2011 Wine Companion, Larry Cherubino wants his wines to be distinctive and to speak clearly of their variety and vineyard site. He believes in spending time in the vineyard, in paying attention to canopy and water management and most importantly, picking at the right time with minimal intervention in the winery. From delicate whites to big reds, his wines have class and finesse. The prestigious Australian producer also makes wine under the Laissez Faire label. An exquisite range of natural wines which are the ultimate expression of site, made in small batches from hand harvested grapes. Vintage
Yields were low with most varieties achieving ripeness at a relatively low sugar levels. The fruit picked was of excellent quality, resulting in crisp and refreshing wines. Vineyard
The magic of wine is its ability to express provenance. Larry Cherubino is in the pursuit of excellence, from travelling the world in the hunt for grape clones suited to the vineyard sites, to dropping the height of the cane from 1.2 m to 400mm, every step counts. Herbicides are not employed, instead a fish and seaweed application is used. At Larry Cherubino they make their own compost to support the whole vineyard biology, maintaining healthy soils with good microbial activity. The philosophy considers the whole eco-system to make healthier, disease resistant vines. The grapes for this wine were planted in 1997, at a density of 1350 vines per hectare on a northerly facing exposure of the Acacia vineyards. The soils are mainly lateritic. Winemaking
The fruit was handpicked, sorted and then fermented in small lot fermenters. A moderate extraction was aimed for, to ensure that the vineyard fruit characters were fully expressed. The fruit was maceration for four months, before being aged in new and one year old oak for six months. Bottling was carried out early to preserve the fruit and give the wine at least ten months in bottle prior to release. Tasting Note
