Tasting Note:
Sagrantino is a bold, tannic Umbrian variety that thrives in warmer
vintages. Chalmers imported the vines and pioneered the variety
in Australia making Sagrantino wines since 2004. The 2012
Chalmers Heathcote Sagrantino is deep and robust without being
overbearing. It shows ample dark cherry and plum fruits while the
palate is finer than the nose suggests with the sturdy but elegant
tannins driving all the way through to the finish.
Winemaking:
Hand picked, 100% destemmed and wild fermented in open
fermenters. Fermentation typically goes for 20 days. The wine is
then pressed and matured in French barriques, 75% old and 25%
new. Malolactic fermentation is natural. The wine is then bottled
without fining and with little or no filtration after about 12 months.
Vineyard :
East-west oriented rows trellised on a single unilateral cordon VSP
system at 4500 vines/ha. East facing sloped site from 200-225
elevation. Complex rocky Cambrian terrain including dolerite,
ironstone, green basalt and jasper with flecks of limestone. A
warm and windy site with low disease pressure, favourable
ripening conditions and moderate annual rainfall (550mm). Hand
pruned to 6 x one bud spurs in winter keeping foliage compact and
yields low. Hand picked, usually in late March.
Food matching:
Well suited to robust hearty foods like roasted pork belly,
cotechino or aged, hard cheeses.
