Yacochuya’s second wine, San Pedro de Yacochuya, is a blend of 85% Malbec and 15% Cabernet, sourced from the same vineyards as the flagship wine. Variety: 85% Malbec. 15% Cabernet Sauvignon.
Vineyard: Yacochuya Estate, Valles Calchaquíes, Cafayate,Salta, Argentina.
Type of vineyard: trellis.
Age of the vineyard: more than 60 years.
Irrigation: By furrow, with waters of slope.
Height above sea level: 2,035 meters.
Production: 5,000 boxes of 6 bottles of 750 cm3.
Harvest: Harvested by hand, in boxes of 18 kg. each, at its optimum maturity.
Selection table: Second half of March and first half of April 2001.
Vinification:
 Fermentation for 10 days at 28 - 30 ° C.
Long maceration (4 weeks) in tanks of 12,500 liters of stainless steel, at controlled temperature.
 Malolactic fermentation in barrel.
 Without filter.
Oenologist:
Arnaldo Etchart (Cafayate, Salta, Argentina) & Michel Rolland (Pomerol, Bordeaux, France).
Aging: 12 months in 70% second-use French oak, 30% new French oak. (Saury barrels of 225 liters).
